Default converting from full color jpg to b+w tif

I have several thousand .jpgs that I need to convert into .tif and compress using CCITT G4. These are pictures of large books taken on an Atiz book drive pro. The problem is that some of these images are in very poor shape and when I convert them the text will be "bleached out" or the discoloration on the edges becomes black and obscures the text.

Sample images can be downloaded here:

as you can see one of the .tif is bleached and the other is very dark on the edges. Any suggestions or advice? I do not know what I am doing wrong...
