Can anyone advise how to edit and/or delete text from images please?

Do you literally mean "from images" ?
In that case it's not text-data anymore, so there's nothing to edit.

I actually inserted the text in the first place and now wish to delete/change it.

You would have to go back to the original image -- which you should always keep a copy of! -- and insert different text. Putting text in an image is no different from any other image editing operation. If you want to make it editable, you have to use an image editor that uses layers. What keeps IrfanView fast is its simplicity.

If you inserted text on a solid background then you can just paste over the top of it with new text on a new background. If you inserted it on a transparent background though you will have to do a bit of cloning with IrfanPaint to hide the previous attempt.
